MUTHREE (MATTHI) Recipe
Ingredients :
Suji and Maida 1/3 cup each
Curd 3/4 cup
Salt 1 1/2 tsps
Ghee for frying as required
Caraway 1 tsp
Black pepper grains 1 tsp
Ghee for greasing flour 150 gms
Method :
Mix semolina (suji) and maida flour. Add salt, 150 gms. of ghee and caraway. Rub the mix with both hands. Add curd and knead a tough dough. If it is too dry add a little water while kneading
Make 10-12 lumps of maida-suji dough. Palm roll. Roll out on chakla palm size cakes (muthrees). Stud muthrees with black pepper grains
Heat ghee on low flame. Fry muthrees to crisp golden pink colour
Muthrees combine best with tea
